As she turns to walk away he calls out her name. She turns around, shocked to hear him call her out.
He asks her if after coffee that maybe she would like to maybe go see a movie

The movie is a nice one but she pays little attention to it. All she can see is his hand, resting on the arm of the theater's chair. During one of the more intense parts of the movie she places her hand over his. He doesn't flinch or move away but instead grasps her hand.

Uhm... My mom ended up dying shortly after I was born. My dad said that giving birth to me resulted in her being ripped across the 4 dimensions and scattered throughout hall of the infinity bells.
So... It didn't work too well I think.

I think she chooses to go to school, her father doesn't make her do anything by the sounds of it. Also, I think her father is actually being very considerate and not a dick, since he would probably destroy large chunks of reality without even trying while awake. See? He justs cares about his little girl.

Also I really think you should give up on these attempts at a human romance with a normal base human. Either look for some sort of augmented of magic human(assuming they exist), or for outer being or something else that's made of sterner stuff so that you don't kill your love interest when you lose control of your emotions. Also tentacles are extremely sexy silly! Gross is just a matter of cultural perception so get over it.

Well first things first lets learn some techniques for self discipline and controlling your emotions. This should be easy to get started.
Next you could start researching Outsiders. It's probably safer to just look in tomes and human practitioners than contact the Outsiders them selves.

Lastly nothing is going to happen on the love front if you don't get the ball rolling, so give him a love letter (or better yet talk to him).

Look, getting the ball rolling on romance quickly and predictably results in emotional turmoil, which results in more people disappearing. That's what most of the stages of romance are: Emotionally eventful.
That suggests two sets of non-exclusive ideas for how to deal with that. The first is to try and pursue intimacy that isn't so emotionally eventful. I split this up into sexual and non-sexual: Non-sexual intimacy, like frienship, public service (volunteering), and such is normal and healthy for humans and would help you gain self-confidence, social awareness and social skills that would help you manage your special difficulties. If teenage sex drive is part of what's making you so emotionally unstable (very likely) you may gain some satisfaction and calm from learning how to engage in masturbation, possibly involving non-living sex toys, and this may lead you to be able and confident in pursuing other detached sexual intimacy like casual sex.
The other main idea it suggests, which I recommend you engage in even if you're happy with and satisfied by the suggestions in the first part is to develop better self-control. This means practicing awareness of yourself and your environment (meditation) and practicing your transformations as an intentional action until you can control when, where and how you transform with perfect control. Possibly go camping without supplies, transform into other creatures and try to experience life the way those do. Practicing being a tree for one would probably be quite different from the emotional stresses of being (partly) human I'd think. If you get really good at this maybe you could eventually take people back out of your head and make them new bodies eventually? I don't know if that's possible but that's good enough reason by itself to work on this if it is.
I am uncertain that contacting other outsiders will help at all since they will probably have different kinds of emotional issues and possibly different particulars of transformation as well (if they are capable of transformation at all). If there are other outsider-human offspring around however those should at a minimum understand your social situation easily and possibly easier to relate to even if they can't tell you anything useful about your transformation.

Do you have any experience with summoning? Are there any steps you can take to protect yourself from something/someone you summon that don't depend directly on you being more powerful than whatever or whoever you summon?

Oh, and one last thing. You said you lose control when you get "excited." I was assuming you meant "aroused," but that doesn't seem quite right. Does it happen every time you're excited about something (a new book, for example), or only when romance and/or physical intimacy are involved?
