I think Unmen are more like human beings that aren't human.
For example, one could say a sociopath is an Unman. He has a human body, but not a 'human' soul.

Alternatively, it could be that an Unman has a human soul, but not a human body, like a magical mutant of sorts.

Unmen are mutated people. There are humans, who are away from the magic zones, the humanish, who are mutated humans in the middle-magic zones, and the unmen in the way-too-much-magic zones. You're allowed to be quite a bit freakish and still be humanish, unmen are the ones who are too twisted and violent for society to tolerate.
